Apple and Greek Yogurt Parfait
- 2 Red apples of your choice
- Whole milk Greek yogurt
- Dash of honey
- 2 tablespoons of toasted pumpkin seeds
- 1 teaspoon of olive oil
- 1 teaspoon of Cinnamon powder
This will need an air fryer. Core and chop apples making small cube-sized pieces. Toss Olive oil and coat evenly. Sprinkle cinnamon and coat evenly. Transfer apple cubes to the air fryer and turn on the Vegetable setting and cook for 5 minutes. Take it out and let it cool.
In another mixing bowl, mix 2 cups of whole milk Greek yogurt with a squirt of honey. I like to whisk the mixture to make it fluffy.
In serving containers, layer air-fried apples and Greek yogurt mixture. Sprinkle pumpkin seeds and enjoy! Can be made in advance and will stay good for 2 days in the fridge. It's healthy, filling, full of protein, and amazingly tasty! Yum!
